Jeff's Stir-Fried Breakfast
A delicious Thai-inspired fried rice breakfast with eggs and vegetables.
Instructions

1Read directions through and the notes before starting.

2Heat 1 TBSP oil in a pan over med-high heat until shiny and starting to smoke.

3Add the chilies, garlic and ginger and sauté for about a minute.

4Add the onions and bell peppers and sauté 2 minutes to soften the peppers.

5Move the veggies to one side of the skillet and add the rice in the empty space and break up any lumps.

6Allow the rice to heat up for a minute or two, but don't let it burn.

7Stir the rice and veggies together to let the flavors mix and add the fish sauce and seasoning sauce.

8Mix everything together and allow the flavors to meld for a minute and then plate the rice.

9Add 2 TBSP of oil to the pan and allow to get hot.

10Add the eggs and cook to your preferred doneness.

11Place the eggs on top of the rice and dig in!
Notes
Prep everything in advance. This recipe comes together quickly once started. Keep stirring in steps 2 and 3 so the chilies, garlic and ginger don't burn. For the rice, preferably dry it out, uncovered, in the fridge for a day or two. Fluff the rice with a fork before starting, try to break it up into individual grains. For sunny-side up eggs, place them in and, using a spoon, take oil from the pan and ladle it onto the egg whites to help cook them quickly. The eggs should only take a minute or two to cook through.
