1Place the pressure cooker in sauté mode, add 1 tbsp oil and let it heat up.

2Add onions and garlic. Sauté until fragrant.

3Add pork belly and brown on all sides. In batches, if necessary.

4Add water, soy sauce and vinegar.

5Close the pressure cooker and set to 15 minutes. When done, manually release the pressure.

6Remove the pork and place in a wok and sauté for about 10 minutes to render some of the fat. Reserve the sauce.

7Remove the fat from the pan. Add the sauce, bay leaves, peppercorns, potatoes and chilies.

8Bring to a boil, cover and boil for about 10 minutes.

9Remove the cover and continue to boil to thicken the sauce, until it is the desired consistency.
